I’m pretty much always the first person home in our house, mostly due to the fact that I get up and go to work stupidly early. But that’s a good thing. Well it is right now, coz it means I have time to be write stuff here. If you ask me in the morning I’m sure I’ll share a slightly different opinion. Like: “arghh WTF am I doing?!”
The other good thing about being the first person home is that tea kinda becomes your responsibility by default.
‘Wait, that’s a good thing?!’
Yeah yeah I know, it’s not always a good thing, but if you think about it, it’s a pretty great opportunity to keep your health and weight loss mission on track. Why? Because cooking your own meals is one of the greatest assets you’ve got on this mission!
Of course cooking your own meals is a lot easier if you’ve got a well stocked fridge. We usually don’t. I dunno about your fridge, but ours never looks empty, but it never seems to have much in it either. Just a kind-of random selection of stuff. Like today: a selection of sauces, pickles and chutneys, some crushed pineapple that really ought to be thrown out. Yoghurt, a block of feta, butter, a lemon, baby carrots, broccoli and half a carton of coconut and almond milk. Oh, I’m way too scared to look in that tupperware container in the back there, so don’t ask me what’s in that!
Surely there’s something in the freezer I can work with? Frozen spinach, frozen corn and some frozen bananas that are destined to be a banana cake one day. Ya get home to this and just think WTF am I gonna make for tea tonight?! Clearly we haven’t done the shopping in a while.
A quick and very cautious sniff of that half carton of milk to check it’s ok. It’s good. The label tells me to visit the So Good website for quick easy recipes. I’m a geek, so yes, I’m gonna do that.

This looks pretty good, but you know I can’t NOT mess with a recipe, right? So, here’s my take on this super healthy soup recipe. And just so we’re clear, you can find the original recipe here.
Broccoli, Spinach and Feta Soup
Serves: 2-3
INGREDIENTS:
600ml So Good Coconut and Almond Milk
¾ cup of water
1 head of Broccoli
250 grams of frozen spinach
50 grams of feta
1 Onion
3-4 cloves of garlic
2-3 teaspoons of chopped thyme
2 teaspoons of grated lemon zest
2 teaspoons of smoked paprika
1 teaspoon of nutmeg
Salt and pepper
Extra feta for garnish
METHOD
- Chop the onion and garlic.
- Heat a little oil (I use coconut oil) in a large pot.
- Add garlic and onion, saute for 2-3 minutes, then add the thyme and continue to cook for another 1-2 minutes.
- Trim the broccoli and cut into smaller pieces if necessary.
- Add milk, water, broccoli, spinach, feta, lemon zest and nutmeg.
- Cover and cook until the broccoli is tender. 5-10 minutes for easy blending.
- Remove from heat and blend the shit out of it with a stick blender, or something similar.
- Stir through smoked paprika and season with salt and pepper.
- Enjoy!
